Have an additional field or checkbox on a membership that a user can select, such as “pay renewal by other means”, perhaps next to the membership in My Memberships or at checkout. And if selected, have this clearly displayed in the pass table in the dashboard, like a flag in a separate column, so admins can easily track those memberships and when to process their renewals by cash, check, or some other means.
